  • Curried Chicken With Coconut And Vanilla

    Ingredients

    • 2 c. coconut lowfat milk (unsweetened)
    • 3 Tbsp. extra virgin olive oil
    • 2 Tbsp. butter
    • 1 x onion, minced
    • 2 Tbsp. ginger root, chopped or possibly grated
    • 2 x cloves garlic
    • 3 Tbsp. flour
    • 1/2 tsp cinnamon
    • 2 tsp curry pwdr
    • 2 tsp sugar
    • 1 tsp pure vanilla extract
    • 3 x -4 pounds chicken meat, cooked, boned, and cut into 2 inch pcs

    Directions

    1. Saute/fry onion, ginger root, and garlic in butter and oil. Stir in flour, cinnamon, sugar and curry pwdr, then add in coconut lowfat milk slowly, and continue to cook gently, stirring till the sauce is thickened. Add in vanilla extract.
    2. Just before serving, add in chicken and adjust salt and pepper seasonings. Heat well. Serve with rice and condiments.
    3. Suggested condiments: quartered limes, toasted grated coconut, chutney, fresh pineapple, and almonds or possibly cashews.
