Chicken With Cucumber And Cashews
Ingredients
- 1 Tbsp. gingerroot, minced
- 2 tsp Szechwan peppers, minced
- 2 Tbsp. sherry
- 2 x chicken breasts, skinned and boned
- 1/2 c. roasted cashews
- 1/2 c. cucumber, diced
- 1 x green onion, minced
- 1 Tbsp. hoisin sauce
- 1 Tbsp. vinegar
- 3 Tbsp. tahini
- 1 tsp chili oil
Directions
- Combine gingerroot, peppers and sherry, then toss gently with chicken, and marinate for 1 hour. Saute/fry chicken in little butter; cold and cube.
- Toss chicken with cashews, cucumbers and onions. Combine hoisin sauce, vinegar and tahni, and toss with chicken mix. Drizzle oil over salad when ready to serve.
- Serves 6
