Curried Chicken Salad Spread
Ingredients
- 4 c. finely-minced cooked chicken
- 3 pkt cream cheese - (8 ounce) softened, see * Note
- 3/4 c. golden brown raisins minced
- 1/2 c. flaked coconut toasted
- 2 x celery ribs diced
- 6 x green onions chopped
- 1 pkt slivered almonds - (2 1/4 ounce) toasted
- 1 Tbsp. curry pwdr
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1 Tbsp. freshly-grated ginger Green onion stems Chopped green onions Toasted flaked coconut Pistachios Fresh dill sprigs Yellow squash wedges Fresh chives Mixed salad greens Pansies Cucumber slices
Directions
- * Note: Reduced-fat cream cheese may be substituted for regular cream cheese.
- Stir together first 11 ingredients. Form into an egg shape. Refrigerate8 hrs, and garnish, if you like. Serve with crackers.
- This recipe yields 20 to 25 appetizer servings.
