Curried Chicken Salad Ii
Ingredients
- 1/3 c. light mayonnaise
- 1/3 c. plain yogurt
- 2 tsp curry pwdr
- 1 tsp granulated garlic
- 3 c. diced cooked chicken
- 1 1/2 c. diced cantaloupe
- 1/4 c. raisins
- 1 Tbsp. minced cashew nuts
- 1/4 c. minced fresh parsley
Directions
- In bowl, mix mayonnaise, yogurt, curry pwdr, and garlic.
- Add in chicken, cantaloupe, raisins, cashews, and parsley. Mix well. Allow to rest 30 min in the refrigerator before serving.
- This recipe yields 6 servings.
- Serving size: 1/6 recipe.
- Comments: If you want a warm, spicy salad, increase the curry pwdr to 1 Tbsp..
