  • Curried Beef Mince and Rice Casserole

    This is my own recipe and i recommend using yellow red and green Capsicums, the capsicums in this really sweeten it up

    Ingredients

    • 1 Onion
    • 1 and 1/2 capsicums
    • 2 Tomato's
    • 5 Spring Onions
    • 1 Spoonful of Chopped/Crushed Garlic
    • 500 Gm of Beef Mince
    • 1 cup of Pre Cooked Rice
    • 1/3 cup of chopped peanuts or cashews
    • 2 Tbl Sp of cooking oil
    • 1 to 1 and 1/2 cups of water
    • 2 teasp of Tomato Paste
    • 3 teasp of Soy Sauce
    • Spices:
    • 2 Dsrt Sp of Curry Powder
    • 1 to 2 teasp of dried Chilli Flakes
    • 2 teasp of Morrocan Seasoning
    • 1 teasp of Pizza Topping Spice
    • 1 teasp of Tumeric
    • 2 teasp of chopped Parsley
    • Salt and Pepper to taste

    Directions

    1. Steps:
    2. Chop Onion into rings then quarter the rings
    3. Chop Capsicum into 1 inch squares/rectangles (i had 3 halfs of a red, green and yellow Capsicums, added a really nice colour)
    4. Dice tomato's into 1/2 inch pieces
    5. Chop the white parts of the Spring Onions into 1 cm pieces (up to where they start to hollow) put aside the green hollow stems and achop into 2 cm pieces to add at the finish
    6. heat the oil in a frypan and add the above ingredients as well as the Garlic
    7. stir and fry for 3 or 4 minutes then add the Water
    8. Mix all the spices together in a small bowl and add to the frypan
    9. After a minute or so add the Mince and cook for about 5 minutes on medium heat
    10. add the precooked Rice, Soy Sauce and Tomato Paste and simmer for about 15 min.
    11. add the crushed nuts and cook for a further 5 minutes
    12. Turn heat off and add the green hollow top stems of the spring onions stir through and serve
