  • Currant And Spice Oatmeal Cookies

    Ingredients

    • 2 lrg Large eggs
    • 1 1/2 tsp vanilla extract
    • 2/3 c. dry currants
    • 1 2/3 c. all-purpose flour
    • 1 tsp baking soda
    • 3/4 tsp salt
    • 3/4 tsp grnd cardamom
    • 1/2 tsp grnd cinnamon
    • 1/4 tsp grnd allspice
    • 1 c. unsalted butter - (2 sticks) room temperature
    • 1 1/2 c. dark brown sugar - (packed)
    • 2 c. old-fashioned oats

    Directions

    1. Whisk Large eggs and vanilla in small bowl to blend. Fold in dry currants; cover and let stand at room temperature 1 hour.
    2. Preheat oven to 350 degrees. Butter and flour 3 large baking sheets.
    3. Sift flour, baking soda, salt, and spices into medium bowl. Using electric mixer, beat butter in large bowl till fluffy. Add in sugar and beat till smooth. Add in currant mix and beat to blend. Stir in flour mix. Fold in oats.
    4. Drop batter by level tablespoonfuls onto prepared sheets, spacing 1 1/2 inches apart. Using moistened fingertips, flatten cookies slightly. Bake 1 sheet at a time till cookies are golden, about 12 min. Cold on sheets.
    5. This recipe yields about 45 cookies.
