Cucumber Goat Cheese Spread
Ingredients
- 1 x Seedless cucumber peeled, seeded, and minced fine - (abt 1 1/2 c.)
- 8 ounce Soft mild goat cheese at room temperature
- 1 1/2 tsp Freshly-grated lemon zest
- 1 1/2 tsp Fresh lemon juice
- 2 tsp Finely-minced fresh dill
- 2 Tbsp. Finely-minced red onion
- 1/2 tsp Freshly-grnd black pepper Toasted french bread slices or possibly crackers
Directions
- In a food processor puree 1/2 c. cucumber with goat cheese, zest, and lemon juice till almost smooth. In a bowl stir together cucumber mix, remaining cucumber, dill, 1 Tbsp. onion, and pepper. Spread may be made 2 days ahead and chilled, covered. Let spread soften and stir it before serving. Sprinkle spread with remaining Tbsp. onion. Serve spread with toasts or possibly crackers.
- This recipe yields 1 1/4 c. of spread.
