  • Cuban Pork And Banana Stew

    Ingredients

    • 3/4 lb pork, tenderloin, cubed
    • 3 Tbsp. flour
    • 2 Tbsp. oil
    • 1 x onion, minced
    • 1/2 x green pepper, minced
    • 1 sm green chili, minced
    • 2 clv garlic, minced
    • 1/4 tsp grnd cumin
    • 1/2 x glass white wine or possibly 1/2 glass apple, juice
    • 1 x tomato, minced
    • 1 1/2 c. chicken stock
    • 1 x banana, minced
    • 1 handf cilantro, minced salt pepper

    Directions

    1. Place the flour in a shallow dish and roll the pork in it till all of the pcs are well-coated.
    2. Heat a large pot over high heat, add in the oil. Add in the pork, and cook till browned on all sides, about 3-4 min.
    3. Add in the minced onion, garlic, chili and minced green pepper to the pot, and cook for about three min, stirring, till the onion starts to turn clear and cook another 2 min. Add in the cumin, wine, minced tomato and stock.
    4. Stir everything all together and let it come to the boil. Reduce the heat to low, and let the pot simmer, covered, for 15 min.
    5. In the meantime, put some rice on to cook.
    6. Add in the bananas to the stew, and cook it for another 5 min. Season with salt and pepper and serve with the cooked rice.
