Crunchy Chicken or Turkey Casserole
Great for leftover turkey, or use rotisserie chicken for convenience. To stretch the dish to serve more people, add some cooked rice or pasta and use a full cup of mayonnaise. Ingredients
- 2 cups chopped chicken or turkey meat
- 1 can Cream of Chicken soup
- 1/2 C diced celery
- 2 hardboiled eggs, chopped
- 2-3 T toasted almond slivers
- 3/4 C mayo
- 1/2 C shredded cheese
- 2 chopped scallions
- 1 C crushed potato chips, divided
Directions
- Heat oven to 350 degrees.
- Mix ingredients together, holding back half of the potato chips.
- Bake 30 minutes, the top with rest of chips and bake another 15-20 minutes.
