Diabetic, Low Fat Chicken Or Turkey Casserole Over Toast
Ingredients
- 2 c. cubed chicken or possibly turkey
- 1/2 c. diced celery
- 1/3 c. sliced onions
- 1/2 x sliced bell pepper
- 3 Tbsp. flour
- 1 1/2 c. chicken broth
- 3 Tbsp. white wine
- 1/2 c. parsley
- 2 Tbsp. fresh rosemary, (optional) freshly-grnd black pepper, to taste
- 4 slc toast
Directions
- Add in cubed chicken or possibly turkey to a small amount of broth in pan and saute/fry till tender and thoroughly cooked.
- Add in vegetables.
- Saute/fry with chicken till tender but crisp.
- Sprinkle flour over chicken-vegetable mix and cook slowly for about five min.
- Add in remaining broth and let sauce thicken slightly.
- Add in wine and other seasonings to taste, cooking several more min.
- Serve over toast.
- Makes 4 servings.
