Crockpot white bean soup
Nice, savory and hot for a cold winters night. Ingredients
- 1 lb cannellini beans
- 1 - 1 1/2 c. Diced carrots
- 3 lg. Ribs celery diced
- 1 sm. Onion cubed
- Up to a cup of diced ham
- One sm. Package of diced fatback
- 1 carton chicken broth
- 1 tbsp. Italian seasoning
- 1 1/2 tbsp. Minced garlic
- 1/2 tbsp. Pepper
- 1/2 tbsp. Powdered onion
- 1 - 2 cubes chicken bullion
- Water if necessary
Directions
- Clean and soak beans overnight, then drain.
- Boil beans in clean water for 10 mins, dip out forming scum.
- Drain beans.
- Fry fatback til pieces are browned.
- Add all ingredients to crockpot including any rendered fat from the fatback. Cover and cook on high for 4 - 5 hours (add hot water to pot to keep beans covered if necessary) until beans are soft.
