    Crockpot Beef Short Ribs with Mushrooms

    Crockpot meals are perfect for busy days. A little prep in the morning, then let the crockpot do its magic on boneless short ribs. By the time you return hours later the tantalizing waft of dinner will welcome you, and the beef will be fork-tender. Serve with mashed potatoes or rice for the mushroom gravy bonus.

    Ingredients

    • 1 tablespoon olive oil
    • 1 1/2 pounds boneless beef short ribs
    • 1/2 medium onion chopped
    • 2 large cloves garlic minced
    • 2 ounces dried gourmet mushroom blend (I used Shiitake-Ya from Costco, but you can sub 4 to 6 ounces sliced fresh mushrooms of your choice)
    • 4 teaspoons beef bouillon paste (or 4 bouillon cubes)
    • 2 cups water
    • 1/3 cup red wine
    • 1/4 cup Worchestershire sauce
    • 1/2 teaspoon freshly ground black pepper
    • 2 tablespoons flour

    Directions

    1. Heat oil in large skillet. Brown short ribs on both sides in oil.
    2. Meanwhile place onions, garlic, mushrooms, bouillon, water, wine, Worchestershire sauce and pepper into crock pot and turn to low heat.
    3. Place browned short ribs on top of ingredients in crockpot, cover and cook for about 8 hours.
    4. Blend flour with 1/4 cup cold water til smooth and stir carefully into crockpot; heat 15-20 additional minutes until sauce is thickened.
    5. Serve with mashed potatoes or rice (optional).
    6. Yield four Hungry Man servings or six 1/4 lb meat servings.
