    Crispy Cast Iron Potatoes

    Crispy Cast Iron Potatoes....thinly sliced potatoes arranged in a cast iron skillet. Flavoured with olive oil and herbs and baked until golden and crispy. Perfect side for any meat, but especially good with steak.

    Ingredients

    • 3 1/2 pounds "unpeeled" russet potatoes
    • 2 shallots, thickly sliced
    • Salt
    • Pepper
    • 1/3 cup Mushroom Sage olive oil
    • 1 1/2 tsp. dried Chervil

    Directions

    1. Preheat oven to 375º F
    2. Brush a 9-10 inch cast iron skillet with oil
    3. Combine flavoured olive oil, salt, pepper and chervil
    4. Thickly slice shallots
    5. Thinly slice potatoes (I used a mandolin)
    6. Place potato slices vertically in cast iron skillet
    7. Add the wedges of shallots throughout
    8. Brush oil/herb mixture over potatoes and shallots
    9. Add more salt and pepper over top
    10. Bake for 2 hours...until golden and crispy
    11. ENJOY!!
