Crispy Bacon And Avocado Salad
Ingredients
- 250 gm Unsmoked streaky bacon, derinded (8oz) Selection of mixed salad leaves
- 125 gm Cherry tomatoes, halved (4oz)
- 1 x Ripe avocado, peeled and sliced
- 12 x Pitted black olives, halved
- 1 x Yellow pepper, de-seeded and diced
- 1 Tbsp. Extra virgin olive oil
- 1 x Clove garlic, crushed
- 2 slc Bread, cubed
- 4 Tbsp. Balsamic vinaigrette dressing
Directions
- 1. Grill the bacon till crisp and cut into cubes.
- 2. Meanwhile arrange the salad leaves, tomatoes, avocado slices, olives and diced pepper on a serving plate.
- 3. Heat the oil in a frying pan, add in the garlic and bread cubes and cook for 2-3 min till golden brown on both sides. Drain well on kitchen paper.
- 4. Sprinkle the bacon and croutons over the salad and drizzle over the vinaigrette just before serving.
- NOTES : A delicious light supper or possibly lunchtime dish or possibly an accompaniment for a picnic or possibly barbecue.
