  • Crisp Sugar Cookies

    Ingredients

    • 3/4 cup shortening
    • 1 cup sugar
    • 2 eggs
    • 1/2 teaspoon lemon extract
    • 2 1/2 cups flour
    • 1 teaspoon baking powder
    • 1 teaspoon salt
    • Colored sugar

    Directions

    1. In a large bowl, cream the shortening and sugar until light and fluffy
    2. Beat in the eggs and the extract
    3. Combine the flour, baking powder, and salt
    4. Gradually add to the creamed mixture
    5. Mix well
    6. Cover and refrigerate for at least two hours or until easy to handle
    7. On a floured surface, roll the dough to 1/8 inch thickness
    8. Cut with a 2 1/2 inch cookie cutter
    9. Place on greased baking sheets
    10. Sprinkle with the colored sugar
    11. Bake at 400 F for 7-9 minutes or until lightly browned
    12. Remove to wire racks to cool
