Crisp Sugar Cookies

- 3/4 cup shortening
- 1 cup sugar
- 2 eggs
- 1/2 teaspoon lemon extract
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- Colored sugar
Directions
- In a large bowl, cream the shortening and sugar until light and fluffy
- Beat in the eggs and the extract
- Combine the flour, baking powder, and salt
- Gradually add to the creamed mixture
- Mix well
- Cover and refrigerate for at least two hours or until easy to handle
- On a floured surface, roll the dough to 1/8 inch thickness
- Cut with a 2 1/2 inch cookie cutter
- Place on greased baking sheets
- Sprinkle with the colored sugar
- Bake at 400 F for 7-9 minutes or until lightly browned
- Remove to wire racks to cool
