    Ingredients

    • Calories = 160 Fat = 35 Sodium = 340 mg (fairly low for a soup!) Carbs = 24 g
    • Quick and Easy Lentils, Vegetables, and Eggs Serves 2 Hungry People
    • 1 can Amy’s Lentil Vegetable Soup
    • 8 asparagus spears, tough ends broken off (you should be left with about a 3 to 4 inch spear)
    • 1 fresh, large basil leaf, chopped
    • 4 cherry tomatoes, sliced
    • 2 sun dried tomatoes packed in oil, chopped
    • 1 TBS olive oil
    • 1 cup Egg Beaters (or use 4 whole eggs, beaten)
    • Pepper and salt to taste.
    • 1 slice Reduced Fat Pepper Jack Cheese

    Workout Review: 12.41 miles ran. 8.36 on the treadmill while watching the Olympics. That made the time go by quickly. 4.05 outside running with Shane. My outside run was a lot slower because my left hamstring began to get sore and my right hip started to ache. I might have compensated for the sore hamstring which triggered the hip problem. Both aches should be gone by tomorrow (fingers crossed). The weather wasn’t the best either. There was a wind heading out and the roads were slushy.

    Tonight, Ted and I plan on hitting the slopes again. He is going to keep up with the snow boarding and I am going skiing. Then we will wine and dine each other and sleep in tomorrow. Oh I am SO looking forward to that! Even though my sleeping in is all of 6:30 am, it gets me 2 1/2 hours extra than during the week. Hold on. Maybe that’s not right because we usually watch a DVD Friday and stay up later. 6:30 am feels good anyway.

    Speaking of DVD:

    Cute movie. Funny in places. Vince Vaughn is just great. His expressions and delivery make this movie laugh out loud funny. Four couples vacation to an island paradise only to find that they have to go through couples therapy in order to stay. No surprise endings just 1 hour 54 minutes of fun.

    Have you ever heard of this product, Amy’s Organic Soups? The company produces vegetarian, natural and organic foods.     In order to put together a filling meal after a hard morning workout and a full day of work, this is my step-by-step method. Is there a name for this meal?

    Pour Amy’s Soup into a pot and heat on low.

    Add asparagus to a DRY frying pan and cook on medium high heat for 5 minutes, turning once.

    Add one fresh basil leaf that has been chopped,

    4 cherry tomatoes that have been sliced,

    2 sun dried tomatoes that have been chopped, (I just LOVE the sweetness of sun dried tomatoes)

    and stir fry for 3 more minutes.

    Remove the vegetables to a plate and keep warm.

    Add 1 TBS olive oil to the hot frying pan, and add the Egg Beaters (or eggs), sprinkle with salt and pepper to taste…

    Pick up the sides of the eggs as they cook, letting the uncooked egg run underneath. When it is almost cooked, but still a little runny on top, add the slice of Pepper Jack

    Cook for one more minute, and add the asparagus-vegetable mix to one side of the eggs

    Flip the plain side over to cover the vegetables,

    Let it cook for 30 seconds or less, then flip it CAREFULLY, once more,

    and slide it off onto the plate.

    Serve with Amy’s Lentil Vegetable soup on the side.
