Creamy Zucchini, Ham & Pasta

- 8 ounces pasta (about 3 cups) such as a farfalle, mostaccioli or other tubular type, etc
- 4 cups sliced zucchini (about 3 medium)
- 1 cup sliced green onions
- 2 ½ tablespoons cornstarch
- ½ teaspoon dried basil, crushed
- ½ teaspoon marjoram, crushed
- 2 13-ounce cans evaporated skim milk
- 1/4 teaspoon black pepper
- 2 cups cooked ham, cut into strips (about 10 ounces)
Directions
- Cook pasta according to package directions; drain.
- Meanwhile In large saucepan combine zucchini, onion, and ½ cup water. Bring to boiling; reduce heat. Simmer covered for 4-5 minutes until vegetables are tender-crisp; drain. Return to saucepan and set aside..
- For sauce, in a medium saucepan combine cornstarch, basil, marjoram, a little of the evaporated milk, and pepper. Stir in remaining milk; cook and stir til thickened and bubbly.
- Stir sauce, ham and pasta gently into vegetables; heat through.
- Yield: Serves 6-8.
