    Low calorie, low fat - this saucy one dish meal is a comfort food unto its own yet one which won’t break your New Year’s resolution goals!     Ingredients

    • 8 ounces pasta (about 3 cups) such as a farfalle, mostaccioli or other tubular type, etc
    • 4 cups sliced zucchini (about 3 medium)
    • 1 cup sliced green onions
    • 2 ½ tablespoons cornstarch
    • ½ teaspoon dried basil, crushed
    • ½ teaspoon marjoram, crushed
    • 2 13-ounce cans evaporated skim milk
    • 1/4 teaspoon black pepper
    • 2 cups cooked ham, cut into strips (about 10 ounces)

    Directions

    1. Cook pasta according to package directions; drain.
    2. Meanwhile In large saucepan combine zucchini, onion, and ½ cup water. Bring to boiling; reduce heat. Simmer covered for 4-5 minutes until vegetables are tender-crisp; drain. Return to saucepan and set aside..
    3. For sauce, in a medium saucepan combine cornstarch, basil, marjoram, a little of the evaporated milk, and pepper. Stir in remaining milk; cook and stir til thickened and bubbly.
    4. Stir sauce, ham and pasta gently into vegetables; heat through.
    5. Yield: Serves 6-8.
