  • Creamy Shrimp Scampi

    A yummy seafood delicacy that combines plenty of shrimp, your choice of pasta noodles and a luscious creamy sauce.

    Ingredients

    • 1 box spaghetti
    • 1/3 cut olive oil
    • 1/3 stick butter
    • 3 cloves garlic
    • 1 small red onion (small dice)
    • 1 t Italian seasoning
    • 1.5-2 # large shrimp (peeled and deveined)
    • 32 oz. chicken broth
    • 1/2 bottle white wine (your choice)
    • 4-6 oz. half and half
    • 2-3 oz. grated Parmesan cheese
    • 1 Lemon
    • salt and pepper to taste
    • Thickening agent ( I use corn starch)

    Directions

    1. Heat olive oil and butter in a large no-stick skillet. Add diced onions and garlic into oil, cook for several minutes to infuse the oil with the flavor and to softed the onions. Pan fry the shrimp and removing to a platter once completed.
    2. Try to coordinate having spaghetti boiled to el dante near the same time that you complete frying the shrimp. With shrimp out of the skillet, added chicken broth, wine and Italian seasoning along wtih salt and pepper. Bring to a boil. Add half and half and shrimp and simmer briefly while adding the spaghetti back into the skillet. Add Parmesan cheese along with juice and zest of one lemon. If the sauce does not thicken with the addition of the cheese, you can added a little thickening agent (follow directions for the thickening agent). When sauce reaches desired consistency (should only take a minute), serve along with a crusty bread.
