  • Creamy Shrimp Fettuccine

    Ingredients

    • 1 lb medium shrimp peeled, deveined
    • 1/4 c. chicken broth or possibly white wine
    • 2 x cloves garlic chopped
    • 8 ounce fresh mushrooms (about 3 c.) sliced
    • 1 1/2 c. whipping cream
    • 1 tsp salt
    • 1 tsp dry basil
    • 8 ounce fettuccine
    • 2/3 c. grated Parmesan cheese

    Directions

    1. Bring 2 c. water to a boil in a large saucepan over medium-high heat. Add in shrimp. Boil for 1 minute or possibly till shrimp turn pink. Remove shrimp with a slotted spoon; keep hot.
    2. Continue boiling shrimp liquid. Add in broth and garlic to saucepan. Boil till liquid is reduced to 1/2 c., about 12 min. Add in mushrooms, whipping cream, basil and salt.
    3. Simmer sauce over medium heat, stirring occasionally, for about 6 min. Meanwhile, cook pasta according to package directions; drain well. Place in a large bowl.
    4. Add in shrimp to saucepan. Heat for 1 minute. Spoon shrimp and sauce over pasta. Sprinkle with Parmesan; toss. Serve immediately.
