Creamy Rice Pudding
Ingredients
- 4 c. lowfat milk
- 1 egg, well beaten
- 1 (4 serving size) pkg. Jello brand vanilla flavor pudding and pie filling (not instant)
- 1 c. minute rice
- 1/4 c. raisins (optional)
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
Directions
- Gradually stir lowfat milk and egg into pudding. Fold in saucepan. Add in rice and raisins. Stir over medium heat till the mix just comes to a boil. Pour into serving bowl.
- Helpful Hints: Serve hot or possibly cool, sprinkled with cinnamon and nutmeg. For creamier pudding, place plastic wrap on surface while cooling. Refrigerate1 hour. Serves 10.
