Creamy Red Beans And Rice With Caramelized Onions Gary Holcomb
Ingredients
- 2 Tbsp. butter
- 1 lrg white onion sliced
- 3 c. warm cooked rice (cooked in chicken broth)
- 1 can red kidney beans (16-oz) liquid removed
- 1/2 c. lowfat sour cream
- 1/2 c. grated Asiago cheese
- 1/4 tsp freshly grnd black pepper
Directions
- Heat butter in large skillet over medium heat. Add in onions; cook till onions begin to brown (about 8 min). Add in rice, beans, lowfat sour cream, cheese and black pepper. Stir till well blended and cheese is melted.
