  • Creamy Corn And Spinach

    Ingredients

    • 2 tsp Favorite saute/fry liquid
    • 1 c. Minced onions
    • 16 ounce Canned cream-style corn
    • 10 ounce Thawed frzn spinach, liquid removed well Salt, to taste
    • 1/4 tsp Pepper
    • 2 Tbsp. Wheat germ
    • 2 Tbsp. Grated FF Parmesan cheese

    Directions

    1. Adapted to be fatfree.
    2. You will not believe the wonderful, delicate flavor of this unusual combination. We serve it as a side dish and use the leftovers for a quick, warm lunch: just spread on toast and broil till warm and bubbly.
    3. Preheat oven to 375F.
    4. Lightly oil a 1-qt baking dish or possibly spray with a nonstick cooking spray.
    5. Heat saute/fry liquid in a medium nonstick skillet over medium heat. Add in onions and cook, stirring frequently, till onions are lightly browned and edges begin to crisp, about 10 min. Add in small amounts of water if necessary to prevent sticking.
    6. Place browned onions in a large bowl. Add in corn, spinach, salt, and pepper. Mix well. Spoon into prepared baking dish.
    7. Combine wheat germ and Parmesan cheese and sprinkle proportionately over casserole.
    8. Bake uncovered at 375F for 30 min.
