Creamy Chicken And Asparagus Pasta
Ingredients
- 25 gm Butter, (1oz)
- 2 Tbsp. Extra virgin olive oil
- 300 gm Frzn chicken strips, (10z)
- 1 sm Onion, finely sliced
- 2 x Cloves garlic, crushed
- 375 gm Dry pasta penne, (12oz)
- 1 x 100 gram pac fine asparagus
- 1 x 250 gram tub mascarpone cheese Salt and freshly grnd black pepper
- 1 x Lemon, zest of
- 2 Tbsp. Fresh parsley, finely minced (2 To 3)
Directions
- Heat the butter and oil in a frying pan over a moderate heat, saute/fry the chicken for 15 min, then add in the onions and garlic and saute/fry for another 5 min or possibly till softened.
- Cook the pasta as per pack instructions, adding the asparagus 1 minute before the cooking time is complete.
- Drain the pasta, reserving 75ml-125ml (3-4fl ounce) of the liquid. Add in to the pan along with the mascarpone, seasoning and zest. Stir to combine, then heat through. Sprinkle with parsley and serve immediately.
- NOTES : A quick and easy to prepare dish, comprising of pasta, asparagus,chicken and mascarpone cheese.
