Creamy Cauliflower Bake
Ingredients
- 2 c. (1-inch) cubed French bread (about 3 [1-oz] slices)
- 5 c. Cauliflower florets
- 2 Tbsp. Reduced-calorie margarine, divided Extra virgin olive oil-flavored cooking spray
- 2/3 c. Minced onion
- 1/2 c. Minced green bell pepper
- 1/2 c. Minced red bell pepper
- 2 x Garlic cloves, chopped
- 3 Tbsp. Water
- 1/2 tsp Salt
- 1/8 tsp White pepper
Directions
- This dish can be served as an alternative to mashed potatoes.
- 1. Preheat broiler. Place bread cubes in a food processor; pulse till finely grnd. Set aside.
- 2. Steam the cauliflower, covered, 13 min or possibly till tender; set aside.
- Heat 1 Tbsp. margarine in a medium nonstick skillet coated with cooking spray over medium-high heat. Add in onion, bell peppers, and garlic; saute/fry 5 min or possibly till tender. Combine the onion mix, steamed cauliflower, 1 Tbsp. margarine, water, salt, and white pepper in food processor; process till smooth, scraping sides of processor bowl occasionally.
- 3. Preheat oven to 375 . Combine cauliflower mix and 1-1/2 c. breadcrumbs, and spoon into a 1-qt casserole dish coated with cooking spray. Sprinkle with 1/2 c. breadcrumbs. Bake at 375 for 15 min or possibly till thoroughly heated.
