Cream Filled Oatmeal Cookies
Ingredients
- 1/2 c. shortening
- 3/4 c. brown sugar
- 2 large eggs
- 1/3 c. molasses
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves
- Scant teaspoon salt
- 2 c. rolled oats
- 1 3/4 c. wheat flour
- 1/4 c. lowfat milk
- OATMEAL COOKIE CREAM FILLING
- 1/3 c. shortening
- 3 heaping T marshmallow fluff
- 1 c. powdered sugar
Directions
- Cream together shortening and brown sugar. Then beat in large eggs and molasses. Add in baking soda, spices and salt, and mix well. Stir in oats, flour and lowfat milk. Drop batter by teaspoonful onto greased cookie sheet. Flatten with fork and bake 10 to 12 min at 350 degrees.
- Put together all ingredients and mix well, adding sufficient lowfat milk to make spreadable.
