    • Cranberry-Orange Sauce-----Southern Living Annual 2005 page 218
    • Cranberry Orange Sauce
    • 1 cup sugar
    • 1 cup orange juice
    • 12 ounce bag of frozen cranberries
    • 1 6 ounce bag packaged dried cranberries
    • 1/2 cup marmalade

    Directions

I am repeating this recipe because it is so right for Thanksgiving. I made this for one of my chicken recipes. I am not totally satisfied with the results but if you like chunky cranberry sauce, you should enjoy this. I suggest running through in the blender or food processor. I think the dish would be a whole different one.

In a medium to large saucepan, bring the orange juice and sugar to a boil, stirring while it cooks.

Add frozen cranberries and bring back to a boil.

Reduce heat and simmer for ten minutes (I needed more time) until cranberries begin to burst. I helped them along by pushing them with a spoon.

The sauce should be thickening. When it has thickened adequately, remove from heat.

Add dried cranberries and marmalade. Mix gently and mix well.

Let cool until ready to use.

This photo is of the cranberries being squished with some chicken.

I submitted this to Tempt My Tummy Tuesdays.
