Cran-Orange Walnut Bread

- 2 eggs
- 3/4 C milk
- 1/2 C oil, or melted margarine, or butter
- 3/4 C sugar
- 2 C + 2 T unbleached flour
- 1 T baking powder
- 1/2 tsp. salt
- 1 tsp. pumpkin pie spice, or 1 tsp. mix of cinnamon and nutmeg
- 1 T orange zest
- 1 C fresh cranberries
- 1/4 C toasted walnuts
Directions
- Heat oven to 350 degrees.
- Beat eggs in a medium bowl, add everything, except the flour, mix.
- Add flour and mix until barely combined.
- Grease and flour the loaf pan, pour in batter.
- Bake 1 hour.
- If top is browning too quickly, cover it with foil and continue to bake.
- Remove bread and place on cooling rack, or eat warm from the oven.
