  • Crab Stuffed Mushrooms

    Ingredients

    • 40 x Bite-sized mushrooms
    • 1 Tbsp. Butter
    • 2 tsp All-purpose flour
    • 1/4 c. Rich lowfat milk
    • 1 Tbsp. Lemon juice
    • 1 Tbsp. Mayonnaise
    • 1/4 c. Shredded Cheddar cheese
    • 4 3/4 ounce Crab, membrane removed
    • 1 tsp Crushed onion flakes

    Directions

    1. Here is one for Chinese Chicken Wings which I found in a cookbook at my Mom's last weekend. It is from a book called "Among Friends" by Rotary International. I have not tried this recipe, but have tried a similar one with soy sauce and honey, and it sounds yummy!
    2. Remove mushroom stems, reserve for another purpose. Heat butter in saucepan. Stir in flour. Add in lowfat milk, lemon juice and mayonnaise, stirring till it boils and thickens. Add in cheese. Stir to heat. Stir in crab and onion. Fill mushroom caps. Bake in 400 F oven for 15-20 min, till heated through. Serve as a finger food or possibly as a table appetizer.
