Couscous Salad With Smoked Sausage
Ingredients
- 1 box couscous (makes 5 c. of product)
- 1/4 pkt Healthy Choice smoked sausage (4 ounce) diced or possibly kielbasa
- 3 x scallions minced
- 8 ounce crushed pineapple liquid removed and juice reserved
- 1 pkt frzn minced spinach (5 ounce) thawed or possibly cut up
- 2 Tbsp. seasoned rice vinegar
- 1 tsp thyme
Directions
- Prepare couscous, using the reserved pineapple juice as part of the water called for on the package. Boil water, stir in couscous and scallions, and let sit covered for 5 min. Stir in rest of ingredients, and either serve now, or possibly put in fridge for 1-2 hrs and serve cool.
- The hubby, who does not prefer couscous, liked this pretty well. I thought it was very tasty, easy, and great for a warm day's light dinner. We served it with some leftover focaccia.
