  • Courgette Squash Burgers

    Ingredients

    • 5 x Courgette (or possibly any other variety of summer squash)
    • 2 Tbsp. Oil
    • 4 x Garlic cloves
    • 4 lrg Onions, diced
    • 2 x Carrots, diced
    • 1 x Green pepper, diced
    • 5 Tbsp. Tahini or possibly peanut butter
    • 3 Tbsp. Tamari
    • 1/2 tsp Paprika
    • 1/2 tsp Oregano
    • 1/2 tsp Basil
    • 1/2 tsp Sea salt
    • 1/8 tsp Red pepper (optional)
    • 1/2 c. Sesame seeds
    • 1/2 c. Sunflower seed meal
    • 1 c. Corn meal, or possibly flour, or possibly soy pwdr

    Directions

    1. Slice the courgette and place in a large pot with 1/2 c. water, adding sufficient squash to fill the pot. Steam over medium heat for 7 min, till soft.
    2. Heat the oil in a large skillet over medium heat; add in the garlic, onions, carrots, celery, and pepper; saute/fry for 7 min, until vegetables are tender.
    3. Drain the courgette and mash well. Add in the sauteed vegetables, tahini, seasonings, sesame seeds, sunflower seed meal, and corn meal. The batter should be thick not wet-add in flour if needed.
    4. Preheat oven to 375. Oil a cookie sheet. Using a Tbsp., make patties and place them on the sheet.
    5. Bake for 8 min on each side, till golden.
