Courgette Chicken Spaghetti
Ingredients
- 7 ounce Uncooked spaghetti
- 1 Tbsp. Oil
- 1 c. Thinly sliced courgette
- 1 sm Onion, thinly sliced, separated into rings
- 1 1/2 c. Cubed cooked chicken
- 1 jar (32-ounce) spaghetti sauce
- 1 can (4-ounce) mushroom pcs & stems liquid removed
Directions
- Cook spaghetti to desired doneness as directed on package. Drain; cover to keep hot. Meanwhile, heat oil in large saucepan over medium-high heat till warm. Cook and stir courgette and onion for 3 min or possibly till vegetables are crisp-tender. Stir in chicken, spaghetti sauce and mushrooms; cook till thoroughly heated. Serve over cooked spaghetti. If you like, sprinkle with grated Parmesan cheese. Four servings.
