  • Country Ham And Apple Slaw Sandwich, Baby Swiss, Bourbon Mus

    Ingredients

    • 16 slc pumpernickel
    • 8 slc baby Swiss cheese
    • 1 lb thinly-sliced Smithfield ham
    • 3/4 c. Creole mustard
    • 2 Tbsp. Steen"s cane syrup
    • 1 Tbsp. honey
    • 2 Tbsp. bourbon
    • 2 c. thinly-sliced cabbage
    • 1/2 x red onion thinly sliced
    • 1 x apple cored, seeded, and julienned
    • 1 Tbsp. minced pickled jalapeno
    • 1/4 c. golden brown raisins
    • 1/4 c. toasted slivered almonds
    • 1 Tbsp. minced mint
    • 1 Tbsp. honey
    • 1/2 c. mayonnaise Salt to taste Freshly-grnd white pepper to taste

    Directions

    1. Spread 8 slices of the bread with the bourbon mustard. Next place a slice of cheese followed by 2 ounces of the shaved ham. Finish the sandwich with 1/4 c. of the slaw and another slice of the bread.
    2. For the Bourbon Mustard: Combine all ingredients in a small mixing bowl and mix well.
    3. For the Apple Slaw: In a medium mixing bowl, combine all of the ingredients except the salt and white pepper. Mix thoroughly and season with salt and white pepper.
    4. This recipe yields 8 servings.
