You can make this cornbread anything you want it to be! Add cheese, jalapenos, sauteed onions, whatever you like! You can also make a one, two or three mix, depending on how much cornbread you need. Instead of one cup (and one tblsp.) of all of the ingredients, you can use 2 or 3 of each to make more.

    Ingredients

    • 1 cup white self rising cornmeal mix
    • 1 cup buttermilk
    • 1 egg
    • 1 tablespoon shortening

    Directions

    1. Preheat the oven to 400 degrees
    2. Place one tablespoon of shortening into an eight inch cast iron skillet Heat the shortening in the oven while you assemble the ingredients.
    3. In a small bowl, add the cornmeal mix, buttermilk and the egg, mix thoroughly.
    4. When the shortening has melted and is hot, use a pot holder and swirl the shortening around in the skillet to coat the sides. Be careful!
    5. Now pour the melted shortening into the cornmeal mixture and mix like a mad woman! If you don't the hot shortening will cook the eggs.
    6. Once thoroughly mixed, pour the cornmeal mixture into the hot skillet and bake for 30 minutes. The cook time for the two or three mix is pretty much the same.
