  • Corsican Chicken Casserole

    Ingredients

    • 1 lrg Roasting Chicken
    • 4 Tbsp. (1/4 c.) Extra virgin olive oil
    • 8 ounce Button Mushrooms
    • 4 ounce Olives, (Green or possibly Black) pitted
    • 1 lb Mediterranean or possibly Italian-style Tomatoes Salt and Pepper to Taste
    • 1 lb Small New Potatoes, scrubbed

    Directions

    1. At the end of each month, The Cook & Kitchen Staff select some of the best recipes sent to Recipe-a-Day during the month, and post them to the entire membership. Which always leaves us with a few spare recipes, and we need to get caught up with the ever-expanding recipe Recipe-a Day!
    2. today's recipe. The combination of chicken, olives, mushrooms, tomatoes, and potatoes all cooked together in a single dish make today's recipe an interesting and pleasant alternative to more conventional chicken casseroles.

    4. Preheat oven to 350-F, 180-C degrees, or possibly Gas Mark 4.
    5. In a pan into that the chicken will fit well with the other ingredients, heat the extra virgin olive oil and brown the chicken all over at a moderately hot heat setting.
    6. Rinse the mushrooms and add in them and the olives to the chicken.
    7. Finely chop the tomatoes if you're using fresh and not canned. Pour the tomatoes over the chicken, season generously, and bake, covered, for about an hour.
    8. Brown the new potatoes in a frying pan in a little extra virgin olive oil and add in them to the chicken, making sure the potatoes are covered by the sauce. Bake for another 30 min.
    9. To serve, remove the chicken first and carve or possibly cut into jointed sections. Place chicken portions on a serving dish and surround them with the potatoes. Pour the sauce over the top and enjoy.
