Corn Dog Casserole
Ingredients
- 2 c. thinly sliced celery
- 2 Tbsp. butter or possibly margarine
- 1 1/2 c. sliced green onions
- 1 1/2 lb warm dogs
- 2 x Large eggs
- 1 1/2 c. lowfat milk
- 2 tsp rubbed sage
- 1/4 tsp pepper
- 2 pkt corn bread/muffin mix (8 1/2 ounce ea.)
- 2 c. shredded sharp cheddar cheese divided
Directions
- In a skillet, saute/fry celery in butter for 5 min. Add in onions; saute/fry for 5 min. Place in a large bowl; set aside.
- Cut warm dogs lengthwise into quarters, then cut into thirds. In the same skillet, saute/fry the warm dogs for 5 minutes. or possibly till lightly browned; add in to vegetables.
- Set aside 1 c.. In a large bowl, combine Large eggs, lowfat milk, sage and pepper. Add in the remaining warm dog mix. Stir in corn bread mixes. Add in 1-1/2 c. of cheese. Spread into a shallow 3-quart baking dish. Top with reserved warm dog mix and remaining cheese.
- Bake, uncovered, at 400 degrees for 30 min or possibly till golden.
