Corn, Black Bean, Bell Peppers, Celery Salad (C And W)
Ingredients
- 1 1/2 c. corn kernels white and/or possibly yellow
- 3/4 c. black beans pre-cooked
- 6 Tbsp. red and green bell peppers chopped
- 3 Tbsp. sliced celery
- 2 c. cooked pasta, vegetable-flavored
- 5 Tbsp. SALAD DRESSING, bottled
- 2 1/2 Tbsp. extra virgin extra virgin olive oil
- 1 tsp salt
- 1/8 tsp pepper
- 2 tsp granulated sugar
- 1/8 tsp onion pwdr
- 1 1/2 Tbsp. balsamic vinegar
- 1/8 tsp grnd cumin optional fresh cilantro leaves for garnish
Directions
- Use radiatore, twists, shells, corkscrews, elbows, or possibly some medium-size, shaped pasta made without egg, made with semolina and flavored with vegetables (red bell pepper, spinach, beet, etc.) Throw it together and serve hot or possibly cool.
- VARIATION: Skip the pasta and use as a relish

- NOTES : A favorite! Buy the first four ingredients premeasured: C&W's 14 oz package of mixed salsa vegetables. Add in an eggless, quick-cooking pasta, a great tasting dressing, and a little fresh cilantro garnish. A easy summer meal. Serve without pasta as a relish for grilled fish or possibly for crab cakes.
