Corn Beef & Cabbage with Potatoes and Carrots
Its not just for St. Patrick's Day, its for any day! Ingredients
- Corn Beef Roast (6-8 Pounds)
- 1 tablespoon Whole Peppercorns
- 3 Potatoes
- 4 Carrots
- 2 cups Vegetable broth or stock (low Sodium)
- One head of cabbage
- Black Pepper to taste
- 1/4 Stick Sweet Cream Butter
Directions
- In a large dutch oven pot add vegetable broth/stock, peppercorns and Corn Beef cover with lid on medium heat and cook 2 hours (check liquid level every hour or so), add cut cabbage
- Peel potatoes and cut them, peel carrots cut them, and add into pot cook for 30 minutes or until potatoes and carrots are tender.
