Corn Beef & Cabbage with Potatoes and Carrots

Ingredients

  • Corn Beef Roast (6-8 Pounds)
  • 1 tablespoon Whole Peppercorns
  • 3 Potatoes
  • 4 Carrots
  • 2 cups Vegetable broth or stock (low Sodium)
  • One head of cabbage
  • Black Pepper to taste
  • 1/4 Stick Sweet Cream Butter

Directions

  1. In a large dutch oven pot add vegetable broth/stock, peppercorns and Corn Beef cover with lid on medium heat and cook 2 hours (check liquid level every hour or so), add cut cabbage
  2. Peel potatoes and cut them, peel carrots cut them, and add into pot cook for 30 minutes or until potatoes and carrots are tender.
  3. Enjoy!
