    Corn Bake Recipe Gluten Free

    Easy to make, can be con­sumed cold or warm. Great snack idea.

    Ingredients

    • 420g can corn
    • 1 cup of milk (I used rice milk)
    • 3 eggs
    • 3 table­spoons veg­etable oil
    • 3 table­spoons self-​raising gluten free flour
    • Salt and pep­per to taste

    Directions

    1. Pre­heat oven to 200°C/180°C fan-​forced.
    2. Open can of corn drain­ing the water out.
    3. Beat eggs for few seconds.
    4. Add the rest of the ingre­di­ents, mix well.
    5. The mix­ture is sup­pose to be runny.
    6. Bake in 20 cm cake tin for 30 min­utes (less time if using non-​gluten free flour) until golden brown.
    7. Serve cold or warm. Wrap in alu­minium foil to keep warm.

      where do you get self rising gluten free flower? Is it in the supermarket

        Hi Judee, sorry for the delay. Yes, we can get self raising gluten free flour in Australia, but you could try any gluten-free flour (if you are using coconut flour, use it with combination of other flours as it is quite strong), then add 1 teaspoon of baking powder mixed with 1 tablespoon of white vinegar, mix them beforehand so you will get a bubbly mixture, and then add into cake mixture. I didn't use it with this corn bake but I used it for other baking recipes and it works.
