    Ingredients

    • 4 lbs 8 oz cabbage, finely shredded
    • 1 lb 8 oz carrots, shredded
    • 1 lb 8 oz apples, Red Delicious, unpeeled
    • 3 1/2 cups green onions, thinly sliced
    • 1 qt 1 cup plain low-fat yogurt
    • 1 1/4 cup reduced-calorie mayonnaise
    • 1/2 cup, 2 Tbsp apple cider vinegar
    • 1/2 cup, 2 Tbsp apple juice concentrate, thawed
    • 2 1/2 Tbsp tarragon
    • 1/4 tsp white pepper

    Directions

    1. Combine cabbage, carrots, apples, and onions in a large bowl (put apples on the bottom or dip in lemon juice to prevent browning).
    2. Cover and chill at least 2 hours.
    3. To make dressing, blend together remaining ingredients and chill.
    4. Just before serving, add dressing and toss well. Serve with a No. 6 dipper.
