Confetti Coleslaw
Ingredients
- 4 lbs 8 oz cabbage, finely shredded
- 1 lb 8 oz carrots, shredded
- 1 lb 8 oz apples, Red Delicious, unpeeled
- 3 1/2 cups green onions, thinly sliced
- 1 qt 1 cup plain low-fat yogurt
- 1 1/4 cup reduced-calorie mayonnaise
- 1/2 cup, 2 Tbsp apple cider vinegar
- 1/2 cup, 2 Tbsp apple juice concentrate, thawed
- 2 1/2 Tbsp tarragon
- 1/4 tsp white pepper
Directions
- Combine cabbage, carrots, apples, and onions in a large bowl (put apples on the bottom or dip in lemon juice to prevent browning).
- Cover and chill at least 2 hours.
- To make dressing, blend together remaining ingredients and chill.
- Just before serving, add dressing and toss well. Serve with a No. 6 dipper.
