  • Commander's Oysters Rockefeller

    Ingredients

    • 8 ounce finely minced bacon
    • 6 x garlic cloves minced
    • 1 stk butter
    • 1 bn green onions finely minced
    • 6 c. finely-minced cooked spinach with juice
    • 1 Tbsp. celery salt
    • 1/4 tsp cayenne pepper
    • 1 c. oyster liquid
    • 4 ounce absinthe Salt to taste Bread crumbs
    • 6 doz oysters with shells

    Directions

    1. Brown bacon, add in garlic, when nearly brown. Add in butter and shallots and after cooking a few min, add in spinach and all remaining ingredients. Thicken with sufficient bread crumbs to make thick, and simmer for about 10 min.
    2. Have 12 pie-pans half filled with rock salt. Arrange 6 oyster shells in each pie-pan. Top each oyster at room temperature in its shell heated through and browned on top.
    3. This recipe yields 12 servings.
