Commander's Oysters Rockefeller
Ingredients
- 8 ounce finely minced bacon
- 6 x garlic cloves minced
- 1 stk butter
- 1 bn green onions finely minced
- 6 c. finely-minced cooked spinach with juice
- 1 Tbsp. celery salt
- 1/4 tsp cayenne pepper
- 1 c. oyster liquid
- 4 ounce absinthe Salt to taste Bread crumbs
- 6 doz oysters with shells
Directions
- Brown bacon, add in garlic, when nearly brown. Add in butter and shallots and after cooking a few min, add in spinach and all remaining ingredients. Thicken with sufficient bread crumbs to make thick, and simmer for about 10 min.
- Have 12 pie-pans half filled with rock salt. Arrange 6 oyster shells in each pie-pan. Top each oyster at room temperature in its shell heated through and browned on top.
