  • Beverly's Oyster Wontons

    Ingredients

    • 1/3 c. butter
    • 4 x garlic cloves chopped
    • 3 x green onions finely minced
    • 1 can water chestnuts - (6 ounce) finely minced
    • 1 bn spinach washed, liquid removed, and finely minced Salt to taste Freshly-grnd black pepper to taste
    • 1 dsh lemon juice
    • 24 x wonton wrappers
    • 24 x oysters shucked, liquid removed Oil for deep-frying Warm mustard or possibly other dipping sauce (my favorite is mango chutney!)

    Directions

    1. Heat butter in large saute/fry pan. Saute/fry the garlic, green onions, water chestnuts, spinach, pepper, and lemon juice over medium heat for 3 to 5 min.
    2. Place about 1 tsp. of the vegetable mix in the center of a wonton wrapper, and top with 1 oyster (if the oysters are large, cut them in half). Bring the lower left corner of the wrapper to the center, followed by the lower right corner and the upper left corner. Finally, fold the upper right corner on top and seal with a little water. Continue with the remaining wrappers, oysters, and vegetable mix.
    3. Place sufficient oil to just cover the wontons in a large frying pan, and heat it to 375 to 400 degrees. Deep-fry the filled wontons for about 2 min, or possibly till golden. Serve immediately with warm mustard or possibly the dipping sauce of your choice.
    4. This recipe yields 8 to 12 appetizer servings.
