Colourful Calico Salad
Ingredients
- 1 c. cooked rice cool
- 3/4 c. canned kidney beans rinsed, liquid removed
- 1 med tomato minced about 1 c.
- 1/2 c. frzn corn whole kernel, thawed
- 1 Tbsp. minced green onions
- 2 Tbsp. red wine vinegar
- 2 tsp extra virgin olive oil or possibly vegetable oil
- 1 tsp fresh basil minced or possibly 1/4 tsp. dry basil leaves Fresh spinach or possibly lettuce leaves if you like
Directions
- In medium bowl, combine all ingredients except spinach; toss well. Serve on spinach-line plates.
- Serves 2 (1-1/2 c.) servings.
- NOTES :TIP: To quickly thaw corn, place in strainer; rinse under hot tap water till thawed.
