    Ingredients

    • 2 c. fresh corn kernels raw
    • 1 sm green bell pepper
    • 1 c. thinly sliced celery
    • 1 c. diced tomatoes
    • 1 tsp dry marjoram crumbled Romaine lettuce
    • 1/2 x red onion sliced into very thin rings
    • 2 Tbsp. white wine vinegar
    • 1 Tbsp. grapefruit juice
    • 1 Tbsp. sugar
    • 1 tsp fresh chopped ginger
    • 1/4 tsp salt
    • 1 lrg peeled cucumber quartered

    Directions

    1. In a salad bowl, combine corn, pepper, celery, and marjoram. Toss with dressing and chill till chilled. Line six plates with romaine leaves, divide salad among them, top with onion rings.
    2. Cucumber Salad Dressing: Place ingredients in bowl fitted with metal blade. Process until cucumber is in small pcs.
    3. Makes about 1/2 c..
    4. Description: "Corn, green bell pepper, celery, red tomato"
    5. NOTES : raw corn - the fresher the better
    6. We tried the cucumber dressing, removed the seeds etc. still burpy. I cannot find those burpless cukes this year.!!
