Calico Salad By Patricia Mack
Ingredients
- 2 c. fresh corn kernels raw
- 1 sm green bell pepper
- 1 c. thinly sliced celery
- 1 c. diced tomatoes
- 1 tsp dry marjoram crumbled Romaine lettuce
- 1/2 x red onion sliced into very thin rings
- 2 Tbsp. white wine vinegar
- 1 Tbsp. grapefruit juice
- 1 Tbsp. sugar
- 1 tsp fresh chopped ginger
- 1/4 tsp salt
- 1 lrg peeled cucumber quartered
Directions
- In a salad bowl, combine corn, pepper, celery, and marjoram. Toss with dressing and chill till chilled. Line six plates with romaine leaves, divide salad among them, top with onion rings.
- Cucumber Salad Dressing: Place ingredients in bowl fitted with metal blade. Process until cucumber is in small pcs.
- Makes about 1/2 c..

- NOTES : raw corn - the fresher the better
- We tried the cucumber dressing, removed the seeds etc. still burpy. I cannot find those burpless cukes this year.!!
