Collards, Golden Raisin, And Almond Saute
Ingredients
- 1/2 c. extra virgin olive oil
- 1 x Spanish onion small diced
- 3 x garlic cloves minced
- 2 bn collard greens washed, and cut in 1/2" strips
- 1 c. golden brown raisins
- 1/2 c. slivered almonds toasted Kosher salt to taste Freshly-grnd black pepper to taste
Directions
- Heat an 8-qt saucepan over high heat. When very warm, add in the oil, onions, and garlic, sauteing quickly for 1 minute. When the onions just start to turn golden brown, add in the collard greens, raisins, and almonds.
- Season with salt and pepper, and add in a little water if necessary, for a little steam. Saute/fry for about 5 to 6 min more, and adjust seasoning, to taste.
- This recipe yields 4 to 6 servings.
