  • Cold Noodles In Spicy Peanut Sauce

    Ingredients

    • 2 Tbsp. Garlic, chopped (fresh)
    • 3 Tbsp. Coriander, chopped
    • 1/2 c. Peanut butter
    • 5 ounce Soy sauce -- light
    • 5 Tbsp. Sugar Rice wine (between -- 1/2 t to 1 Tablespoons)
    • 1 Tbsp. Warm bean paste -- (up to 2 Tablespoons)
    • 1 Tbsp. Sesame oil
    • 1 lb Lo mein noodles (other -- noodles will do, as ramen noodles - or possibly even spaghetti)

    Directions

    1. Cook the lo mein according to directions. Let cold.
    2. Mix the rest of the ingredients. Peanut butter doesn't mix very well, so for a few min you'll think you've made a mistake. Do not worry, just keep stirring till it's smooth. Add in the sauce to the noodles.
    3. Warm bean sauce also goes by the name Szechuan bean sauce etc. This is the main "spicy" ingredient and should be handled with care. Vary this ingredient to taste.
    4. This recipe is probably very good without it.
    5. It's also quite good served when the noodles are still warm.
    6. NOTES:* Mildly spicy cool noodles - I first had this at Brandy Ho's in Chinatown, San Francisco. I forget where I found the recipe.
    7. Difficulty: easy.
    8. Time: 10 min preparation, 5 min cooking.
    9. Precision: no need to measure.
