Cold Dill And Cucumber Soup
Ingredients
- 1 x European Cucumber peeled, seeded, and minced
- 1 1/2 c. Lowfat yogurt
- 1 1/2 c. Buttermilk
- 1 med clove garlic chopped
- 2 Tbsp. chives finely minced
- 2 Tbsp. fresh dill finely minced Salt and white pepper to taste
Directions
- Puree half the cucumber in food processor with steel blade for about 20-30seconds. Combine the yogurt and buttermilk in m bowl, adding the pureed
- mix , garlic, chives, and dill. Mix well. In processor, pulse reamingcucumber into small chunks. Add in to pureed mix. Add in salt and pepper.
- Taste and correct seasonings. Chill till chilled. Garnish with fresh dillor minced walnuts.
