Cold Corn And Tomato Soup
Ingredients
- 3 c. Chicken stock, or possibly broth
- 1 1/2 c. Tomatoes, peeled, seeded, and minced
- 1 med Onion, minced
- 2 c. Corn, kernels
- 1 x Bay leaf Salt, to taste Pepper, to taste
- 1 pch Sugar
Directions
- Combine all ingredients in a saucepan. Bring to a boil. Reduce heat.
- Simmer, partially covered for 20 min. Cold slightly. Puree in a blender. (You may have to do it in 2 batches.)
