  • COFFEE CHOCOLATE CAKE

    Ingredients

    • 1 1/2 cups cake flour
    • 2 cups find sugar
    • 3/4 cups good cocoa powder
    • 1 teaspoon baking powder
    • 2 teaspoons baking soda
    • 1 teaspoon salt
    • 1 cup buttermilk
    • 1/2 cup vegetable oil
    • 2 extra-large eggs
    • 1 teaspoon pure vanilla extract
    • 1 cup hot coffee

    Directions

    1. 1. Preheat oven to 350 degrees F. and ensure oven rack is set in the middle.
    2. 2. Prepare two 8-inch x 2-inch round cake pans.
    3. 3. Sift into a measuring cup the require flour then pour into the mixing bowl.
    4. 4. Sift into a measuring cup the require cocoa then pour into the mixing bowl.
    5. 5. Add sugar, baking powder, and salt into the mixing bowl.
    6. 6. Use an electric mixer fitted with a paddle attachment and mix at low speed until flour, cocoa, sugar, baking powder, and salt are combined.
    7. 7. In another bowl, combine the buttermilk, oil, eggs, and vanilla.
    8. 8. Turn mixer on low speed and slowly add the egg mixture to the dry ingredients.
    9. 9. With mixer still on low, drizzle hot coffee and mix just to combine then stop.
    10. 10. Scrap the bottom and sides of the bowl with a rubber spatula.
    11. 11. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean.
    12. 12. Cool cake in the pans for 10 minutes, then remove from pan and place on cooling rack to cool completely.
