COFFEE CHOCOLATE CAKE
Ingredients
- 1 1/2 cups cake flour
- 2 cups find sugar
- 3/4 cups good cocoa powder
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 extra-large eggs
- 1 teaspoon pure vanilla extract
- 1 cup hot coffee
Directions
- 1. Preheat oven to 350 degrees F. and ensure oven rack is set in the middle.
- 2. Prepare two 8-inch x 2-inch round cake pans.
- 3. Sift into a measuring cup the require flour then pour into the mixing bowl.
- 4. Sift into a measuring cup the require cocoa then pour into the mixing bowl.
- 5. Add sugar, baking powder, and salt into the mixing bowl.
- 6. Use an electric mixer fitted with a paddle attachment and mix at low speed until flour, cocoa, sugar, baking powder, and salt are combined.
- 7. In another bowl, combine the buttermilk, oil, eggs, and vanilla.
- 8. Turn mixer on low speed and slowly add the egg mixture to the dry ingredients.
- 9. With mixer still on low, drizzle hot coffee and mix just to combine then stop.
- 10. Scrap the bottom and sides of the bowl with a rubber spatula.
- 11. Pour the batter into the prepared pans and bake for 35 to 40 minutes, until a cake tester comes out clean.
- 12. Cool cake in the pans for 10 minutes, then remove from pan and place on cooling rack to cool completely.
