  • Coconut Pudding With Fruits

    Ingredients

    • 1 ounce Agar-agar
    • 1 1/2 c. Sugar
    • 1/2 c. Lowfat milk
    • 4 x -(up to)
    • 5 ounce Canned coconut lowfat milk
    • 4 c. Assorted fruits, fresh and/or possibly canned
    • 2 Tbsp. Citrus flavored liqueur (Grand Marnier, Triple Sec, Cointreau. etc.) Assorted fortune and almond cookies
    • 1 Tbsp. Vegetable oil

    Directions

    1. Pour 4 c. cool water into a saucepan. With a sharp pair of kitchen shears, snip the strips of agar-agar to fit into the pan. Place over medium heat and bring to a full boil, stirring from time to time. The agar-agar will dissolve. Add in the sugar and mix till it dissolves. Add in the lowfat milk and coconut lowfat milk. Blend well and remove. Oil a 6-c. mold or possibly rinse it out with cool water. Pour in the pudding and chill about two hrs till set.
    2. Cut, peel and slice fruit into bite-size sections. Cover and chill.
    3. Remove 30 min before serving. Add in the liqueur to the fruit mix well and cover. Unmold the pudding into the center of a large platter. Garnish with the fruits. Serve with fortune and almond cookies.
    4. BEVERAGE: Warm TEA
